Tuscan Herb Cold-Infused High Polyphenol Extra Virgin Olive Oil

Bring the flavors of the Italian countryside to your kitchen with our Tuscan Herb Infused Extra Virgin Olive Oil. This isn't just flavored oil — it's a cold-infused, high polyphenol EVOO crafted from the December 2025 harvest, delivering both exceptional taste and proven health benefits.

What Makes This Olive Oil Different?

Our cold infusion process preserves the delicate herb flavors and the olive oil's natural polyphenol content — powerful antioxidants that protect blood lipids from oxidative stress and reduce inflammation. Unlike heat-extracted oils, cold infusion maintains the integrity of oregano, rosemary, marjoram, and garlic, creating a robust, aromatic flavor profile without artificial additives.

Flavor Profile

A harmonious blend of traditional Italian herbs — oregano, rosemary, marjoram, and garlic — delivers savory, aromatic notes perfect for Mediterranean cooking. The high-quality EVOO base provides a peppery finish that signals its phenolic richness and oleocanthal content.

What a find!

I made my own flavor. I selected Cilantro, Onion, Dried Jalapeño and Lime olive oil as base. I wan't sure at the time of purchase how this is going to work, as I have's seen any other company offering this? The bottle arrived quickly and I was so surprised how good it is. Green color, amazing flavor! I use this on roasted chicken. I'm getting my second bottle with different flavors!

Frequently Asked Questions

What does "cold infused" mean?

Cold infusion steeps fresh herbs in extra virgin olive oil at low temperatures over time. This preserves the oil's natural polyphenols and antioxidants while allowing oregano, rosemary, marjoram, and garlic flavors to develop fully without heat degradation.

What are polyphenols and why are they important?

Polyphenols are natural plant antioxidants. At 581 mg/kg, this oil is exceptionally rich in compounds like oleocanthal and hydroxytyrosol. EFSA confirms that olive oil polyphenols help protect blood lipids from oxidative stress when consuming at least 20g daily.

How should I use this olive oil?

It's ideal as a finishing oil — for bread dipping, drizzling over roasted vegetables, seasoning grilled meats and fish, tossing with pasta, or making vinaigrettes. Pair with Sicilian Lemon Balsamic for a citrus vinaigrette or Traditional Balsamic for dipping.

How should I store it and how long does it last?

Store in a cool, dark place away from heat and sunlight. The glass bottle preserves purity. Made to order for peak freshness — use within 6–12 months of opening and keep the cap tightly sealed between uses.

Can I cook with this oil at high heat?

While high polyphenol EVOO has a decent smoke point, this herb-infused oil is best as a finishing oil or for low-to-medium heat cooking. This preserves the delicate herb flavors and maximizes the polyphenol benefits that can diminish at very high temperatures.

What makes this different from regular infused olive oils?

Most infused oils use low-quality base oils and heat extraction. Ours starts with high polyphenol EVOO (581 mg/kg) from the December 2025 harvest, cold-infused to retain both health benefits and authentic herb flavor. It's made to order and bottled in glass for freshness.
